Who doesn’t enjoy a delicious cupcake? After a whimsical themed High Tea at the Chesterfield Hotel in London, this simple cupcake recipe definitely deserves a mention.


125g melted and cooled unsalted butter

1½ cups self-raising flour sifted

¾ cup cater sugar

2 teaspoons vanilla extract or paste

½teaspoon baking powder

2 eggs

½ cup milk


¾ cup single pouring cream

375g white chocolate, grated or finely chopped

2 teaspoons vanilla extract or paste


Preheat oven to 160˚C (325˚F) and place paper cases into a muffin tin.

In a large bowl combine butter, flour, sugar, vanilla, baking powder, eggs and milk and whisk until well combined.

Spoon the mixture into the paper cases and bake for 20-25 minutes or until cooked when tested with a skewer. Completely cool on wire racks.

For the frosting, stir cream over a small saucepan over low heat. Do not boil. Place the chocolate in a large bowl and pour the cream over. Stir ganache gently to combine and melt chocolate and set aside for 2 minutes. Refrigerate until just cool. Add the vanilla and whisk until soft peaks form. Spoon the frosting into a piping bag and pipe onto each cupcake. Decorate and enjoy 😊

  4. Oh my! Heaven on a plate. And such timing! I have friends coming on Sunday and have decided to make some sort of an English tea for them. Since they are all French. These are must … I think even the French must respect that this is serious competition for a Macaroon!!!

  12. I did some baking today too. My sister and I baked two victoria sponged. One with orange curd and chocolate spread and one with buttercream and jam. Was great to bake again. I used to bake all the time when I was in GCSE’s and Sixth Form but haven’t baked so much the past few years.
